Tuesday Yummy treats

I'm a little lost for things to post today so I figured I'd share what I ate today.

I started my day with a yummy breakfast. I had Quaker oats porridge with almond milk, sprinked with a little cinnamon and topped with some summer berries. It was delicious but I think I may have to switch up the fruit next time as this combination was just a little bit too sweet for me. I think it would go better with granola and yoghurt or something.

I figured I needed to wake myself up so also added a glass of ice cold water with a few drops of lemon juice. It's a great way to get your metabolism working!

Then I was debating being bad for my lunch however since I knew I had to photograph it, I pushed myself to cook something healthy. I really wanted to use spinach and did debate a salad but I'm not all that keen on rabbit food, so I figured I'd cook something up. I started out with my griddle and sliced up a portion of chicken breast before lightly cooking it in some olive oil. Once it was cooked through, I added a clove of crushed garlic, and an onion sliced up. It smelt amazing and my tummy was rumbling at this point! I figured I'd add some more bits and pieces and make it super healthy, so I added 3 chopped mushrooms and half a tin of chopped tomatoes together with a few little tomatoes chopped up. When all of that was cooked, I threw in a handful of spinach and let it reduce. Plating this up felt like it took forever but it was worth the wait and super yummy. (I split the cooked portion in half as it was a huge amount of food so I ate half as shown on this picture, so i'll probably have the rest tomorrow for lunch).

I enjoyed this with a big glass of water. Since I hadn't drank a lot of water by this point, and I had a dentist appointment so had to nip out, I took a bottle of water with me. I made sure to drink it all before I went into the dentist, to increase my water intake for the day. My appointment went fine and my teeth didn't need any work which is great news! 

However, after running around and doing a little shopping I was getting hungry and unfortunately, I didn't think to pack any snacks with me. I popped to Asda and picked up some fruit. I got an apple and banana which was super yummy and definitely did the job. This picture isn't the exact apple and banana I ate, since I was way too hungry to stop to take a photo, but you get the idea.

When I got home it was dinner time, so I put some green beans and carrots into my steamer, then baked a portion of chicken breast, with some paprika sprinkled on top, then covered it in onion and red peppers and let it bake for a good 40 minutes, covered. Then I heated up some chopped tomato and topped my chicken portion with it. It was delicious and I managed to take a pic for the camera this time!
