Jelly Tot Temptation Cupcakes

Since I didn't get a Birthday cake yesterday, I decided I would do some baking and make  my own. One of my gifts was a "1000 cupcakes recipes" book, so I figured that would be perfect. I went to the celebration and party section and found a recipe for Jelly Tot temptation cupcakes. First off I checked quickly to see if I had the ingredients at home, since I did, I was ready to get started. I took pictures of the process so you can see how I got in. Although they don't look as good as the book, they do taste absolutely delicious! I couldn't help myself, I had to try one.

1000 cupcake recipes
The recipe was for 12 cupcakes, but since there are only two of us, I decided to half everything to make 6 cupcakes. It worked out pretty well! So here is what you need to make the cupcakes (for 6 cakes)

1/4 cup unsalted butter
1/2 tsp vanilla extract
1/4 cup caster sugar
1 egg
1/2 cup self raising flour
ingredients for the cupcakes

I actually read the instructions and it says to add the milk, but there was no milk in the ingredients section. It definitely needed some, so I added about 1/4 cup of milk too.

The first step is to preheat your oven to 180'c or 350F, then cream butter and sugar until it turns pale and fluffy with an electric wisk. Then you go ahead and add the egg and vanilla extract, followed by flour and milk!

When it looks something like the mixture above, spoon it equally into 6 paper cases (which will already be placed onto your cupcake tray). 

Now it's time to pop these into the oven for 18-20 minutes. When you think they're done, pop a wooden skewer or toothpick into the top and if it comes out clear, they're ready!

Now its time to remove them and let them cool. Whilst they're cooling, you can prepare your frosting. This is what you will need:

1/4 cup unsalted butter
1 cup icing sugar
1/4 tsp vanilla extract
1/4 tbsp milk (I found I needed a little more)
Jelly tots

Beat the butter with a whisk until soft, and then add icing sugar, vanilla and milk and mix until it's all combined.

Now it's time to decorate! Swirl your icing onto the cupcakes, and top them with a little jelly tot.
